If you’re all about that dough, spiral mixers have a reputation for being the best dough mixers because of the way the mixing action optimizes the structure of the gluten molecules. Unlike planetary mixers where the bowl is stationary, spiral mixers have one motor that rotates the bowl and the other that rotates the spiral arm. This mixing action also keeps the temperature of the dough lower which is better for yeast activation and fermentation control.

Keep in mind that higher watts does not necessarily mean more power – if the motor is not designed well and draws a lot of power with little torque, it may require more electricity to produce less power.
